Bacillus Coagulans Cannot be Used in a Food Processing Plant

Mention spore forming bacteria to a food manufacturing plant manager, and there’s a good chance you’ll hear “Not in my plant!” While this concern is understood, the use of GanedenBC30 probiotic in food and beverage manufacturing requires a revision to this common response.

GanedenBC30 (Bacillus coagulans GBI-30, 6086) a popular spore forming probiotic ingredient has been used in more than 60 countries and in 200 manufacturing plants around the world, without one case of cross contamination. Clearly, this spore former does not present contamination concerns. Here, we speak with David Marciniak, food scientist at BIO TK. Will GanedenBC30 cross contaminate in my plant?

One important note to remember when considering GanedenBC30 is that Bacillus coagulans spores will not germinate unless the proper water activity, temperature, nutrients and pH conditions are available. Since Bacillus coagulans spores are more difficult to germinate and grow under normal product processing and storage conditions, other common organisms such as yeast and mold or psychrophilic bacteria would propagate before any Bacillus coagulans spores would have a chance to germinate and grow. Hence, any contamination issues would be from organisms other than GanedenBC30 under normal plant conditions. To minimize any cross-contamination issues, GanedenBC30 should be processed under procedures generally accepted for the use of allergens. Cleaning and air handling protocols for GanedenBC30 are generally no different in food processing facilities than those currently in place for removing any other potential contaminants such as allergens or other microorganisms. Does GanedenBC30 produce biofilms?

GanedenBC30 is not able to attach to standard food processing surfaces such as stainless steel as are many of the common food microorganisms including lactic acid bacteria. GanedenBC30 spores and vegetative cells are easily removed from process surfaces since cell adhesion and the formation of biofilms are not inherent properties of Bacillus coagulans.

How do you clean GanedenBC30? Do I need to flush the line every time I use it or do I need dedicated line for GanedenBC30?

GanedenBC30 is a spore and as such is easily removed from processing systems. Dedicated lines are generally not required to run GanedenBC30 products if adequate cleaning and sanitizing protocols are followed. Verification and validation of cleaning is recommended and should be followed not only with GanedenBC30 process equipment but within any food manufacturing environment. I already clean my plant for allergens. How do I need to change processes to clean for GanedenBC30?

Allergen cleaning protocols would be effective in removing GanedenBC30 from processing environments. Generally accepted cleaning verifications such as ATP testing following an allergen clean would ensure that all soils are removed from the processing system including allergens, GanedenBC30 or potential spoilage organisms.

What happens if GanedenBC30 gets airborne? Is it dangerous for employees? Will it contaminate?

GanedenBC30 is approved by the FDA as a GRAS (Generally Recognized As Safe) probiotic for use in foods and beverages, and even infant formula. As such, GanedenBC30 is considered a beneficial ingredient and not a hazardous material to processing personnel. No special PPE are required when working with GanedenBC30. The same process protocols established for environmental contamination within food processing environments should be employed with facilities processing GanedenBC30. Air filters in dry environments would remove potential airborne contamination. GanedenBC30 can be blended with other dry or wet ingredients in the processing system to aid in dispersion and minimize it becoming airborne.

Will GanedenBC30 adhere to my equipment?

How is GanedenBC30 different from other spore formers, from a quality and contamination standpoint?

GanedenBC30 is unique in that it is an FDA GRAS probiotic approved for use in foods, beverages and infant formula. GanedenBC30 is a spore forming strain of Bacillus coagulans which offers excellent survival through high heat and high pressure processes. GanedenBC30 requires a temperature in excess of ambient conditions for germination and growth. It is different from other types of Bacillus such as Bacillus subtilis as it does not produce biofilms and therefore is easily cleaned in food manufacturing environments.

How is it stored—is there any special handling?

GanedenBC30 should be stored in its original container as recommended by Ganeden. No special storage conditions are required. It can be stored alongside other ingredients without cross contamination issues.

My plant is Kosher, can I use GanedenBC30?

GanedenBC30 is approved for use in Kosher products. Documentation can be provided by Ganeden.
